Ingredients (for 2 plates of madeleine molds - 9 cakes per plate -):

  • 100 g of chestnut flour
  • 2 eggs
  • 6 g of baking soda
  • 60 g of butter
  • 2 cs of milk
  • 60 g sugar (brown sugar)
  • 1 large tablespoon of chestnut honey.

Preparation :

Melt the butter over very low heat in a saucepan. In a bowl, whisk together eggs, sugar, milk, flour, baking soda, melted butter and honey. Let cool for a good hour. Preheat the oven. 6. Fill the madeleine molds and cook for about 15 minutes.
